1.Japanese food history.

Japanese food means dish of the Japanese style. The Japanese food is original developed food in japan.


In Jomon era, they were eaten by hunting and collecting the nuts. Also they were making a millet. They were cooking use a fire and water for many years. They made an earthenware vessel, and heating was enabled. They were taught deep-fried food and tea from China. Japanese food history was began from Jomon.


In Yayoi era, rice was formed food culture.

In Nara era, recipe was conveyed from China. They device it, and Japanese original dish began to appear before long.

In Heian era, cooking technology was undeveloped. The difference between noble and commoner began to appear.

In Kamakura era, a food processing technology was conveyed. They developed soybean and vegetable dish technique. It decided directionality of Japanese foods later.



In Muromachi era became formality to put a dish on a low dining table. Tea ceremony was born by it. Dried bonito was created these time.


Sushi and tempura and soba developed in Edo era. The restaurant which enjoyed eating and drinking appeared. Soy sauce and sugar was invented as seasoning. A Japanese sweet was made by the spread of sugar. Cooking difference began to appear in a district. A dish book called "the dish story" was published for the first time. The circulation became popular in the national scale. Many food were get, and the width of the dish spread out. In this way, culture to enjoy cooking spread out.




A fish and rice are the food which is representative in Japan. Japan is surrounded in the sea. A fish and rice culture were born by abundant water. But, rice growing did not develop in Hokkaido and Okinawa. Because developed meat culture. The culture introduced after the Meiji era.

Consumption of the meat increased, and the image of Japanese foods changed now. A family restaurant and a fast food shop appeared, and the eating out spread to enjoy a meal. In addition, the convenience stores is increase, too. Convenience food is developed eating habits by the spread. Japanese foods are received all over the world now.

I think the Japanese foods come from China. In japan, make a food utilize a climate. Recently Japanese food is lacking quality because the people demand convenience. Thereby, the balance of the meal worsen. From now on, we should think about the food culture like a Japanese.
